
Today's Round Up: Drinks
I first had this drink while I was living in New Zealand. The holidays in New Zealand are a bit different as it is the middle of summer there, but that doesn't stop anyone from making hot, delicious, spiked drinks. I also came to found that my mom had the very same recipe. Hot wassail can be served anytime of year and it can be made with or without alcohol. It will make your house smell amazing and it will warm you to your core.
Hot Wassail
* 3 Cups apple cider or juice
* 1 1/2 Cups pineapple juice
* 1 1/2 Cups orange juice
* 3 cinnamon sticks
* 1 1/2 tsp. whole cloves
* 3 tsp. candied ginger (or 1 tsp. ground ginger)
* 1 - 1 1/2 Cups honey
* Rum (optional)
Directions
Mix apple cider, pineapple and orange juice in large pot. Put spices in cheesecloth bag or tea infuser, and add to pot. As it starts to heat, add honey and stir until incorporated. Bring to a boil then simmer for 10 minutes (or longer) to incorporate flavors. Keep warm over low heat. If you would like to add rum, add 1 Cup just before serving. You may also make this in a crock pot and heat on low for four hours. For extra flair, garnish with an apple or orange slice and/or a cinnamon stick. Enjoy!
