:: Thursday's Recipe Rodeo ::

It's that time again! This is a place to get some new recipes or maybe even a twist on an old one. Feel free to take any recipe here and use it as you please.

Today's Round Up: Summer Grillin'

Our best time of year has arrived! The end of August brings Indian summer to our area and with it, a desire to grill as much as we can! The other night we made a delicious light chicken meal.Grilled Chicken with Lemon Basil Dressing

* 3-4 boneless, skinless chicken breasts
* Olive Oil
* Salt and pepper
* 1 - 1 1/2 Cups fresh basil leaves, lightly packed
* 1/4 Cup lemon juice (or fresh juice from one large lemon)
* 1 tsp. lemon zest
* 1 garlic clove
* 1 tsp. salt
* 1/2 tsp. black pepper
* 1/4 - 1/3 Cup Olive Oil


Coat chicken lightly with olive oil and season with salt and pepper to your liking and grill until just cooked through, between 7-8 minutes per side.

Meanwhile, in blender or small Cuisinart blend basil, garlic, salt, pepper, lemon juice, and lemon zest together. Gradually blend in olive oil.* *Please note: the dressing will taste VERY tart on it's own, however when drizzled over chicken, it is a perfect balance and is simply divine! Nini, are you creating all of these recipes?!? I made the bruschetta the other day for lunch and it was sublime.When I successfully grow basil again, I will try the lemon chicken recipe. Thank you!Lovesisaac

Here's our regular -
Salt n Herb Rubbed Chicken
Marinate your chicken pieces in 1 part lemon juice to 2 parts Olive Oil. Marinade for about 2 hours, or more.
Prepare rub -
equal parts (about 1/4)
kosher salt
all finely chopped
add in fresh ground pepper
Rub chicken & grill!
We usually grill extra & add it to salad throughout the week.
