Today's Round Up: Twist on an Original


I have never been a big meatloaf fan. I didn't grow up eating it at home, and while I will eat it if it is served to me, I can't say that I have ever wanted to make it in my own home...until now. When I saw this recipe of Giada's (from Food Network) had to try it. It is absolutely delicious! It is easy to make and kid friendly as well.

Turkey Meatloaf with Feta and Sun-Dried Tomatoes

* 1/2 Cup plain bread crumbs
* 1/3 Cup chopped fresh flat-leaf parsley (optional)
* 1/4 Cup garlic and herb-marinated sun-dried tomatoes, chopped
* 2 cloves garlic, minced
* 2 eggs, at room temperature, lightly beaten
* 2 tablespoons whole milk
* 1/2 Cup crumbled feta cheese
* 1 1/2 teaspoons kosher salt
* 1 teaspoon freshly ground black pepper
* 1 pound ground turkey meat, preferably dark (I use lean and it is still very moist)

Directions

Preheat oven to 375 degrees. Spray a 9x5 inch bread pan with cooking spray. In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.

Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let rest for 5 minutes. Transfer to a cutting board and slice. Put on a serving platter and serve. Today's Roundup: Kid Friendly

My friend Shelley mentioned that it would be good to get some recipes on here that are kid friendly. I suppose all of my recipes are kid friendly if your kids are easy eaters. My kids are not. While it can be challenging to get the kiddos to eat all that we would like them to, they both LOVE meatballs (and so do I). This recipe is easy, delicious and on the healthy side -- they have veggies right inside! You can add any vegetables you like too. So, go get some ingredients and enjoy these Turkey-Veggie Meatballs. Your kids might like 'em too!

Turkey-Veggie Meatballs

* 1 1/2 pounds ground turkey (I use 93% lean so they aren't too dry)
* 1/2 Cup dry breadcrumbs
* 1/2 Cup (2 ozs.) finely shredded Parmesan cheese
* 1/3 Cup green onions, finely chopped
* 1/4 Cup carrot, shredded
* 1/4 Cup zucchini, shredded
* 1/4 Cup fresh parsley, chopped (optional)
* 1/4 teaspoon salt
* 1/4 teaspoon fresh ground pepper
* 1 large egg white
* 2 garlic cloves, crushed
* cooking spray

Directions

Preheat oven to 400 degrees. Spray baking sheet. Combine all ingredients in a large bowl being sure not to over mix. I substitute shredded summer squash for the parsley. Shape mixture into 30 (1 1/2-inch) meatballs. Bake for 15 minutes or until light browning begins. Remove from oven and serve plain or with sauce.
